The DIVELLA semolina comes from just the very heart of the wheat kernel: just 60% of the part right at the centre of the kernel becomes semolina, thus  making it a very pure product with almost none of the dark brown or black spots typical of poorer-quality semolina which use at least 70% of the durum wheat kernel.

Because of its coarser grain than the remilled semolina, it is particularly suitable for homemade fresh pasta such as orecchiette, caserecce, tagliatelle, pappardelle, etc.
