COOKING SUGGESTIONS
Lasagna is most often used to make “lasagna Bolognese” where the pasta is put in between layers of Bolognese sauce, bechamel sauce, and grated cheese such ricotta, grana or parmigiano. The vegetarian version, “Lasagna Parmigiana” replaces the Bolognese sauce with thick, sliced pieces of fried or pan-cooked eggplants and tomatoes.
