“Pesto” sauce pairs wonderfully with Fusilli pasta. There are countless variations on pesto – which make it so widespread – but the most known remains the Genovese version. “Pesto alla Genovese” consists of garlic, pine nuts, basil, and generous amounts of hard cheeses such as Grana Padano, Parmigiano Reggiano or even Pecorino Sardo, all blended together with generous amounts of extra virgin olive oil.
